While you're at costco, check a touch further down in the frozen seafood section for frozen oysters on the half shell. Costco is the sole retail source for this product from Handy seafood. 2 dozen oysters for under $20.00. What joy! Try a little Ponzu and a thin slice of scallion instead of the hot sauce and these babies taste fresh from the sea.

If you do not care for breaded cod, you would not do well in WI. We have a large German Catholic population in WI, who eat fish on Fridays, and they have somehow convinced us Norwegian Lutheran Badgers that this is as it should be. You can't throw a rock here in WI, without having it land in front of a restaraunt that serves all you can eat breaded deep fried cad on Friday nights. Indeed, going out to eat on Fridays, even if you are after something else, is called "going out for fish".

Drat, now I will have to stop at Viking Village Foods on the way home, and buy some breaded cod. Or at least some fish sticks.

I, on the other hand love fish.
I like to take tilipia (or cod or a similar light fish) and dredge it in seasoned flour before frying it in olive oil. To half a cup of flour, I'll add a tablespoon each of garlic powder, white pepper, and garam masala. You can use other spice mixtures if you like. Mix well, dredge fish in it, and fry until done -- 10 minutes total time per inch of thickness.
The same seasoned flower also makes a good dredge for pork chops.
And with the pork chop drippings, forms the basis for a nice gravy.

My husband and I have tried a parmesan encrusted fish from Costco that was fabulous. I will put this on my shopping list. We do try to eat more fish from time to time but it is hard to have access to delicious fish any time you want in the mid-West.

For those who love pork, I must share the following recipe because it truly takes longer to get the ingredients at the supermarket than it does to make this.

4 lbs. pork butt or shoulder - have the butcher cut it into large stew pieces.
2 oranges
4 limes
cumin
1 onion

Spray a slow cooker with non-stick spray. Throw the pork pieces in. Roughly chop one onion and throw that in. Squeeze the juice of the oranges and limes over the pork. Salt and pepper to taste. Add a little cumin (maybe one teaspoon). Cook for 6 or so hours on low.

Serve with tortillas, shredded cheese, some tomato chopped up, sliced avocado. I'm telling you, I can't stop eating it. And it reheats so easily and well that you actually WANT the leftovers!!!!
